This is the famous Siberian Sturgeon black caviar.  It's taste and flavor are similar to wild caught Osetra Caviar but it costs significantly less. Siberian caviar has grains of medium size with a tender structure that melts in your mouth, uncovering the subtle nutty flavor with sea notes. The beads are of a light to dark grey color with glistering appearance.
 
The Siberian sturgeon may not be as well known as the Russian Osetra, but don’t let this deter you! Some connoisseurs even favor the Siberian’s more complex sweet taste and fruity flavors with a hint of the sea.  The pearl size of this light-to-dark-gray caviar is small and the texture is delicate, practically melting in your mouth.
